“I love to cook,” said 86-year-old Fredoria Wiggins. She has been making this custard pie since she was 13 years old, when her stepfather first taught her to make it.

She cooked for her entire family back then but now cooks mostly for herself, which is something she is happy to still be able to do.

Five years ago, a car accident nearly claimed her life. A speeding car hit her as she was stepping onto the sidewalk at the intersection of Goodfellow and St. Louis Avenue. She suffered a broken pelvis and tailbone and was paralyzed on the right side of her body.

Although doctors said she would never walk again, four months later she was on her feet. She remains active and hopes that others will enjoy this family recipe.

Old-fashioned custard pie

Ingredients:

1 pie shell (can be frozen)

4 eggs

½ cup of sugar

1 pint half & half or light cream

½ cup of whole milk

1 ¼ teaspoon vanilla extract

¼ teaspoon ground nutmeg

¼ teaspoon salt

Directions:

1. Preheat oven to 350 degrees F

2. In large bowl, mix eggs and sugar until blended. Beat in half & half, milk, vanilla extract, nutmeg and salt.

3. Pour filling into pie shell and bake pie for 50 to 55 minutes or until done.

Cool on wire rack to room temperature if you want to serve warm or cool, cover and refrigerate to serve cold later.

Prep: 30 minutes chilling & cooling

Servings: 1 pie serves 10
