Ingredients
4 6 oz. boneless, skinless chicken breasts
4 oz. raw white mushrooms
2 tbsp. butter, unsalted
4 tbsp. Extra Virgin Olive Oil
1/2 c. Marsala wine
1/4 c. Sherry
Preparation:
- In large skillet, heat 2 tbsp. Extra Virgin Olive Oil. Add chicken, sauté 5-7 minutes on each side.
Sauce:
- Melt butter and 2 tbsp. Extra Virgin Olive Oil together over medium heat. Add mushrooms and sauté. Add Marsala wine and sherry. Simmer until mushrooms are tender.
- Pour sauce over cooked chicken breasts and serve.
